Shrimp with Garlic Jalapeno Butter
Shrimp with Garlic Jalapeno Butter is so simple, but the flavor is amazing. Shrimp dusted in potato starch with a delicious sweet and spicy butter sauce.

- 1 qt cold water
- 1/8 cup kosher salt
- 1/2 tbsp baking soda
- 1 lb shrimp-peeled and deveined
- 1 tbsp fish sauce
- 1 tbsp lime juice
- 1 tbsp sugar
- 1 1/2 tsp pepper
- 1/2 cup potato starch
- 3 tbsp butter
- 2 scallions-cut into 1/2" pieces
- 3 tbsp garlic-minced
- 2 jalapenos-seeded and sliced thin
- 1/3 cup olive oil or enough to coat the bottom of the pan

Combine 1 quart of water with salt and baking soda. Whisk until salt is dissolved. Add shrimp and soak 20 minutes.
In a small bowl combine fish sauce, lime juice, sugar and pepper, set aside.
Pat shrimp dry with paper towels. In a colander sprinkle shrimp with 1/4 cup potato starch and shake off excess. Repeat again with the rest of the potato starch, shake until well coated.
Add enough oil to cover bottom of skillet and heat to shimmering. Shallow pan fry for a couple of minutes and flip shrimp over to fry the other side.
Melt butter in a saucepan over medium heat. Add scallions and cook for 1 minute then add garlic and cook for 30 seconds. Add jalapenos and sauce stirring often and cook until sugar is melted and comes to a boil. About 30 seconds.
Remove shrimp to a paper towel lined plate to drain. Place shrimp in a large bowl and pour sauce over and toss shrimp to coat.
Transfer to a platter and sprinkle with cilantro and fresh scallion greens. Serve immediately.
