Spaghetti Squash Turkey Marinara

Hearty "spaghetti" dinner with ground turkey and spaghetti squash is so satisfying. You won't miss the carbs.

Ingredients
  

  • 1 lg spaghetti squash
  • 1 lb ground turkey
  • olive oil
  • 1 bell pepper-chopped
  • 1 onion-chopped
  • salt
  • pepper
  • 1 tbsp fresh oregano-chopped
  • 3 cloves garlic-minced
  • marinara
  • fresh basil-garnish
  • parmesan shredded-garnish

Instructions
 

  • Cook spaghetti squash in the microwave-see notes.
  • Cook bell pepper and onion in olive oil add salt and pepper until translucent, about 6 minutes on medium. Add garlic, oregano and basil, cook 1 more minute.
  • Add turkey and cook 8 more minutes adding oil if needed.
  • Add marinara sauce. I used some I had frozen but just use whatever you have on hand. Simmer about 10 minutes.
  • While your sauce is simmering shred the spaghetti sauce and add salt and pepper.
  • Plate the squash and ladle sauce over the squash. Garnish with parmesan and fresh basil.
