Sweet Potato Sausage PIe
Sweet Potato Sausage Pie is delicious and incredibly versatile. It's fantastic for a cozy weeknight dinner, bringing warmth and satisfaction to the table.

- 2 sweet potatoes
- 1 tbsp olive oil
- 1 lb Italian sausage
- 6 eggs
- 1/2 cup milk
- 3/4 cup mozzarella-shredded
- 2 tbsp parsley-chopped
- 1/2 tsp kosher salt
- 1/8 tap red pepper flake
- 1/2 tsp black pepper
- 2 Roma tomatoes-sliced
Preheat oven to 350'.
Spray 9" pie plate with cooking spray.
Slice sweet potato very thin or use your vegetable sheeter attachment with the thick blade. Cut sheets into 12" lengths. Brush with olive oil. Place in the pie plate in a crisscross pattern to make the crust.
Cover with foil and bake for 15 minutes. Remove foil and bake for an additional 10 minutes. Remove from oven and set aside.
Cook sausage over medium heat adding oil if needed, about 5 minutes. Cool slightly.
In a medium bowl whisk egg, milk, mozzarella cheese, salt parsley, red pepper flake and pepper. Stir in sausage and pour over sweet potato crust.
Top with sliced tomatoes.
Bake for 35 minutes.
