Tomato Burrata Salad
Tomato burrata salad brings together juicy, ripe tomatoes and rich, creamy burrata cheese for a combination that’s both luxurious and refreshingly light.

- 1.5 lbs tomatoes cut into 1" pieces
- 8 oz cherry tomatoes
- salt and pepper to taste
- 3 oz croutons
- 1/4 cup olive oil
- 1/2 tsp garlic powder
- 1/2 tbsp dried minced onion
- 1 1/2 tbsp white balsamic vinegar
- 1/2 cup fresh basil-chopped
- 8 oz burrata-room temperature
Toss tomatoes with 1/4 teaspoon salt and let drain in a colander until ready touse.
Take your croutons and place in a ziploc bag to crush or use the food processor to make crumbs, Don't process them to fine. Set aside you will use these on the top. If you have plain croutons you can season them with garlic and onion powder.
IN a large bowl whisk balsamic vinegar with garlic powder and minced onion and 1/4 teaspoon salt. Drizzle 1/4 cup olive oil while whisking to emulsify. Set aside for 10 minutes.
Add tomatoes to the dressing and toss then add basil and toss. Taste to see if you need additional salt.
Arrange tomatoes on a serving platter and sprinkle pepper over the top about 1/4 teaspoon.
Cut or tear burrata into large pieces saving the cream that comes out when tearing it. Sprinkle over tomatoes and drizzle with leftover cream.
Sprinkle the bread crumbs over the top and serve.
