Ingredients
  

  • 1 Lb Ground beef
  • 2 Tbsp Olive oil-divided
  • 5 Cloves Garlic-minced
  • 1 Onion-diced
  • 1 Red bell pepper-diced
  • 1 Jalapeno-diced
  • 2 Tbsp Chili powder
  • 1 Tbsp Cumin
  • 2 Tsp Salt
  • 2 Cups Dried black beans
  • 5 Cups Chicken broth plus more if needed
  • 2 Limes-juiced
  • 1 Iime-cut into wedges for garnish
  • 1/2 Cup Red onion-diced for garnish
  • 1/2 Cup Cilantro-chopped for garnish
  • 1/2 Cup Tomato-chopped for garnish
  • 1/2 Cup Sour cream for garnish
  • 1 Avocado-Chopped for garnish

Instructions
 

  • Set the Instant Pot to sauté and add 1 tablespoon oil then ground beef. Cook, breaking up as it cooks, for 5 minutes until no pink remains. When it's done cooking remove with a slotted spoon and set aside.
  • Add remaining oil to the Instant Pot and add the onion, bell pepper and jalapenos, cook for 3-5 minutes. Add garlic and cook for 1 more minute, stirring continuously. Sprinkle the chili powder, cumin and salt over the onions then stir in and cook for 1 more minute. Add the beans and broth.
  • Put the lid on the Instant Pot and set the valve to sealing. Set the Instant Pot to 50 minutes.
  • When the Instant Pot beeps, let pressure release naturally for 10 minutes. Then release the pressure by turning the valve to open being careful not to burn yourself. When the pressure is released and the button drops, remove the lid.
  • Add in lime juice. Use an immersion blender to puree the soup, don't puree it completely because you want some texture. Add in cooked ground beef and put Pot on saute to reheat the beef. Taste and add salt and pepper as needed. If the soup is too thick add broth to thin it.
  • Serve with garnishes.
