Brown Sugar Peach Cake
Ingredients
CAKE
- 1 15oz box yellow cake mix
- 3 eggs-room temperature
- 1/3 cup vegetable oil
- 1/2 cup peach juice
- 1 lb peaches-chopped
FROSTING
- 1/2 cup butter-cut into pieces
- 1/2 cup heavy cream
- 1 cup brown sugar
- 1 tsp vanilla
- 2 1/2 cups powdered sugar-sifted
Instructions
- Preheat oven to 350' Lightly spray a 9×12 cake pan.
- Mix cake mix, eggs, oil and juice together in your mixing bowl until well combined. Fold in peaches and spread batter in your greased pan.
- Bake for 28 minutes or until a toothpick comes out clean.
- In a saucepan add the butter, cream and brown sugar, bring to a boil, stirring constantly. Remove from heat and stir in vanilla and powdered sugar. Whisk until smooth and there are no lumps. Put back on low heat if needed.
- Pour frosting over the cake until its evenly coated. Do this quickly as the frosting will harden and won't look smooth.
- Let the frosting harden at room temperature or put in the fridge to speed up the process.
