Ham and Cheese Egg Mug
Want a delicious and quick breakfast give this ham and cheese egg mug a try. This is a staple for me and is great when I am in a rush and need a quick meal. Not just for breakfast either.
Grab a deep coffee mug and omelet ingredients and the microwave. Don’t forget to spray your mug first with cooking spray. If you don’t the positive side is, you will get your workout in trying to get the eggs out. In about 6 minutes you have breakfast that will certainly sustain you until lunch time.
The eggs will rise like a soufflé and that is why you need to use a deep mug. The cooking spray will keep the eggs from sticking to the mug. Cover with a paper towel so you won’t have to clean up your microwave from egg splatter.
My go to for an egg mug is bell pepper, laughing cow cheese wedge, liquid eggs, ham and top it with fresh chopped tomato. The process will be the same on whatever toppings you like to use. Egg mugs are like scrambled omelets so add your favorite toppings.

Ham and Cheese Egg Mug
Ingredients
- cooking spray
- 1 cup liquid eggs-like Egg Beaters
- 1/4 cup chopped bell pepper
- 1 or 2 slices ham-chopped
- 1 wedge laughing cow cheese
- salt and pepper
- 1/2 tomato-chopped
Instructions
- Spray a deep coffee mug with cooking spray.
- Add bell pepper to the mug, cover with a paper towel to prevent splatter and microwave for 99 seconds.
- Remove mug from microwave and liquid eggs, pinch of salt and pepper. Microwave for 99 seconds.
- Remover from microwave and add cutup cheese wedge and chopped ham and stir. Add another pinch of salt and pepper.
- Microwave for another 99 seconds. Remember to cover with paper towel each time you microwave. Remove from microwave and stir to make sure your eggs are cooked to your liking. There will be some residual water due to the ham and peppers.
- Leave set for a couple of minutes while chopping your tomato. Add chopped tomato to the top of your egg mug and add another pinch of salt and pepper.
- Grab a spoon or fork and dig in!
