Airfryer Mashed Potato Balls

Air fryer mashed potato balls is the perfect use for leftover mashed potatoes. Almost makes me want to whip up a batch of mashed potatoes so I can make these.

Never freeze leftover mashed potatoes again. I know who has leftover mashed potatoes! I haven’t figured out my ratio on how many potatoes to mash since I’m just cooking for 2 of us. These air fryer mashed potato balls would make a wonderful appetizer as well as a side. The great thing about these is I can make them ahead and put them in the fridge and then when I’m ready just pop them in the air fryer. For some crispy fluffy goodness. Making these for the holidays makes me feel less stressed because they are so simple and can be made ahead but have big flavor. If you want to make the balls uniform in size use an ice cream scoop. Have some fun with this and mix up the flavors.

Airfryer Mashed Potato Balls

Airfryer loaded mashed potato balls is the perfect use for leftover mashed potatoes. Almost makes me want to whip up a batch of mashed potatoes so I can make these.

Cook Time 8 minutes
Resting time 1 hour
Course Appetizer, Side Dish

Ingredients
  

  • 4 cups Mashed potatoes-cold
  • 8 slices Bacon or 8 Tbsp of bacon bits
  • 1/2 cup Onion-chopped
  • 1 1/2 cups Cheddar cheese-shredded
  • 1 cup Flour
  • 3 Eggs-slightly beaten
  • 1 1/2 cup Plain breadcrumbs
  • Cooking spray

Instructions
 

  • Cook bacon until crisp and then chop. Reserving grease for onions.
  • Cook onions in reserved bacon grease and let cool.
  • Mix mashed potatoes with bacon, cheese and cooked onion in a large bowl.
  • Put potato mixture in the fridge to rest for 1 hour or longer.
  • Put a sprinkle of breadcrumbs on a large platter to rest the uncooked balls.
  • In 1 shallow bowl add flour. In the second shallow bowl add beaten eggs and the third shallow bowl the plain breadcrumbs.
  • Use a cookie scoop, two spoons or my preferred method my hands with latex gloves. Scoop the potatoes into a ball shape the same size.
  • Roll the ball in flour and shake off excess.
  • Then place the floured ball into the egg and roll to coat. Allow excess to drip off being careful not to smash the balls.
  • Place the egg coated balls into the breadcrumbs and roll to coat completely. Then put balls on your resting platter.
  • Repeat the process until all the balls are coated.
  • Put balls onto the tray or basket depending on the type of airfryer you have. Spray both sides of balls with cooking spray.
  • Cook in the airfryer at 400' for 5 minutes and then turn over and cook for 3 more minutes.
  • Serve Immediately with chives.
