Ingredients
  

  • 1 Lb Medium frozen shrimp
  • 6 Tbsp Chile lime marinade-bottled Frys
  • 1 Red bell pepper-sliced
  • 1 Yellow bell pepper-sliced
  • 1 Onion-sliced
  • 2 Tbsp Olive oil
  • 1 Tsp Cumin
  • 1/2 Tsp Chili powder
  • 1/2 Tsp Salt
  • 1/2 Cup Sour cream or plain yogurt
  • 1 Tbsp Cilantro-chopped
  • 8 6" flour or corn tortillas
  • Cilantro-garnish
  • Sliced avocado-garnish
  • Lime wedges-garnish

Instructions
 

  • Preheat oven to 400'
  • Combine shrimp with 4 tablespoons of marinade in a bowl and toss to coat. Marinade for 15 minutes.
  • In a bowl combine bell pepper, onion, oil, cumin, chili powder and salt. On a parchment lined sheet pan add the combined ingredients. Roast for 9-10 minutes. Add shrimp to the sheet pan and roast for 10 more minutes.
  • While shrimp is in the oven combine sour cream, remaining marinade and 1 tablespoon cilantro.
  • Serve shrimp and veggies along with tortillas. On the side serve lime crema, cilantro, avocado and lime wedges.
