Butter Fried Potatoes
Ingredients
- 2 Lbs Potatoes-cut into 1" cubes
- 1/2 Tsp Salt-divided
- Salt for potato water
- 8 Tbsp Butter
- 1/4 Cup Parsley-chopped
- 2 Cloves Garlic-minced
- 1/4 Tsp Black pepper
Instructions
- Salt 2 quarts of water for the potatoes in a large pot. Bring potatoes to boil over high heat. Reduce heat to medium low and simmer until potatoes are tender, about 4-5 minutes. Drain potatoes and set aside.
- Melt butter in a 12" nonstick skillet over medium heat. add potatoes in an even layer, sprinkle with 1/4 teaspoon salt. Don't disturb potatoes until they are golden brown, about 6-8 minutes.
- Flip potatoes and sprinkle with remaining salt. Continue cooking potatoes turning every couple of minutes, about 6-8 minutes. Until potatoes are well browned on all sides. Turn off the heat.
- Add parsley, garlic and pepper then gently toss to combine. Transfer to a platter and serve.
