Savory Oatmeal Peas and Parmesan

Ingredients
  

  • 4 Cups Water
  • 1 Cup Steel cut oats
  • 1/4 Tsp Salt
  • 2 Tsp Lemon juice
  • 2 Cups Parmesan cheese-finely shredded plus extra for serving
  • 1 1/2 Tsp Black pepper
  • 1 Cup Frozen peas
  • 4 Tsp Olive oil

Instructions
 

  • Bring 3 cups water to boil in a large saucepan. Turn off heat and stir in oats and salt. Cover and let stand for a minimum of 2 hours up to 10 hours. The longer it sits the less time you need to cook.
  • Stir in the rest of the water and lemon juice. Bring to a boil then reduce heat to medium, cook, stirring occasionally until oats are softened. The oats should still have some chew and they will be thick. Similar to risotto, about 4-6 minutes. Stir in peas and cook for 1 minute.
  • Off heat stir in Parmesan until incorporated and let stand for 5 minutes. Season with salt and pepper to taste.
  • Divide between bowls and drizzle with olive oil, sprinkle with extra Parmesan and pepper. Serve.
  • Add an egg-fried or soft boiled. Bacon or chopped ham would also be a great addition.
