Ingredients
  

CUPCAKES

  • 1 1/2 Cups All-purpose flour
  • 1 1/2 Tsp Apple pie spice
  • 3/4 Tsp Baking powder
  • 1/4 Tsp Baking soda
  • 1/4 Tsp Kosher salt
  • 1/2 Cup Vegetable oil
  • 1/2 Cup Granulated sugar
  • 1/2 Cup Brown sugar
  • 2 Eggs-room temperature
  • 1 Tsp Vanilla
  • 1/2 Cup Plain Greek yogurt-room temperature
  • 2 Granny Smith apples

APPLE COMPOTE

  • 1 Granny Smith apple-peeled and diced
  • 3 Tbsp Granulated sugar
  • 1 1/2 Tsp Cornstarch
  • 1 Tsp Lemon juice
  • 1/4 Tsp Apple pie spice
  • Pinch Kosher salt

WHIPPED CREAM

  • 1 1/2 Cups Heavy cream-cold
  • 1/4 Cup Plain Greek yogurt
  • 1/3 Cup Powdered sugar
  • 1/2 Tsp Apple pie spice
  • 1/4 Tsp Vanilla

Instructions
 

CUPCAKES

  • Preheat oven to 350'. Line ax12 cup muffin tin with cupcake liners.
  • Whisk together flour, apple pie spice, baking powder, baking soda, and salt in a medium bowl.
  • In a large bowl whisk together oil, sugars, eggs and vanilla until combined. Add yogurt and whisk until smooth.
  • Peel and grate apples using the large holes of the box grater. Add dry mixture to sour cream mixture and whisk until batter is smooth. Fold in grated apples.
  • Divide the batter evenly between the cupcake liners. Filling about 2/3 full. Bake until toothpick comes out clean, 25 minutes. Let cool.

APPLE COMPOTE

  • In a small saucepan combine apples, sugar, cornstarch, lemon juice, apple piecspice, and a pinch of salt.cook on medium, stirring occasionally until apples soften and get saucy, about 6 minutes. Transfer to a bowl and refrigerate until cold and ready to use.

WHIPPED CREAM

  • In a stand mixer using the whisk attachment, beat heavy cream, yogurt, sugar, apple pie spice and vanilla until stiff peaks form. Spoon onto of cupcakes and top with apple compote. Or cut out the center from the cupcake, add compote to the cutout and top with whipped cream. Dust with apple pie spice.
