Baked Yogurt

Ingredients
  

  • 2 cups Greek yogurt
  • 4 eggs
  • 1/4 cup maple syrup or honey
  • 1 tsp vanila
  • 3 tbsp cornstarch
  • 1 1/2 cups berries-divided

Instructions
 

  • Preheat oven to 350". Line an 8X8 baking dish with parchment paper.
  • In a large bowl add yogurt, eggs, maple syrup and vanilla. Whisk until smooth and then add cornstarch and whisk again until well combined.
  • Add 1 cup of berries o the yogurt mixture and gently stir in. Pour mixture into the prepared baking dish. Sprinkle remaining berries over the top.
  • Bake for 45 minutes until yogurt is set in the center and not jiggly. Remove from the oven and let cool almost completely.
  • Cut into 9 squares. Enjoy as is or if you want it a little sweeter add more maple syrup.
  • Store leftovers in the refrigerator. This can be frozen.
