Black Pepper Chicken
Ingredients
- 2 tbsp vegetable oil
- 2 shallots
- 1 tsp ginger-fresh grated
- ⅓ cup brown sugar
- 3 tbsp fish sauce
- 2 tbsp rice vinegar
- 1 tbsp chili garlic sauce
- 1 tsp ground pepper
- 1 ½ lbs chicken breast-boneless and skinless
- ¼ cilantro-chopped
Instructions
- Slice shallots thin. Set aside. In a 12" skillet heat oil on medium high heat. Add shallots and ginger, cook until softened, about 2 minutes.
- Stir in sugar, fish sauce, vinegar, chili garlic sauce, and pepper and bring to a simmer. Stir to dissolve sugar. Cook until thick and syrupy, about 5 minutes.
- Cut chicken into 3/4" pieces and add to skillet with sauce. Stir occasionally until cooked through, about 7 minutes. Sprinkle with cilantro and serve.
- It's great on rice or zoodles.
