Blueberry chia jam makes a perfect addition to the blueberry overnight oats. It also is really tasty on toast.

Ingredients
  

Oats

  • 1/2 cup plus 2 Tbsp Old fashioned oats
  • 1/2 Cup Almond milk
  • 5 Tbsp Plain Greek yogurt I use Fage 0 fat
  • 1/4 Tsp Vanilla
  • 1 Tbsp Maple syrup
  • 1/2 Cup Fresh blueberries
  • 1 Tbsp Chia seeds

Blueberry Chia Jam

  • 2 Cups Fresh blueberries
  • 1 Tsp Lemon zest
  • 2 Tbsp Lemon juice
  • 2 Tbsp Maple syrup
  • 2 Tbsp Chia seeds
  • 1/2 Tsp Vanilla

Garnish/Topping

  • Fresh blueberries
  • Ganola
  • Nuts

Instructions
 

  • In a mason jar add all the ingredients for the oats. Stir well to combine.
  • Make the chia jam by adding all the ingredients to a small saucepan over medium heat. When the blueberries begin to burst smash them with the back of a wooden spoon. Increase the heat to medium high until it comes to a boil. Cook, stirring often for 5-8 minutes. Remove from heat and allow to cool and thicken. Taste and add more sweetener if needed.
  • Into your mason jar stir in 1 tablespoon of the chia jam.
  • Leave the oats in the fridge overnight or at least 4 hours.
  • Before eating add 1 tablespoon chia jam, fresh blueberries and your favorite toppings.
