Blueberry Overnight Oats
Ingredients
Oats
- 1/2 cup plus 2 Tbsp Old fashioned oats
- 1/2 Cup Almond milk
- 5 Tbsp Plain Greek yogurt I use Fage 0 fat
- 1/4 Tsp Vanilla
- 1 Tbsp Maple syrup
- 1/2 Cup Fresh blueberries
- 1 Tbsp Chia seeds
Blueberry Chia Jam
- 2 Cups Fresh blueberries
- 1 Tsp Lemon zest
- 2 Tbsp Lemon juice
- 2 Tbsp Maple syrup
- 2 Tbsp Chia seeds
- 1/2 Tsp Vanilla
Garnish/Topping
- Fresh blueberries
- Ganola
- Nuts
Instructions
- In a mason jar add all the ingredients for the oats. Stir well to combine.
- Make the chia jam by adding all the ingredients to a small saucepan over medium heat. When the blueberries begin to burst smash them with the back of a wooden spoon. Increase the heat to medium high until it comes to a boil. Cook, stirring often for 5-8 minutes. Remove from heat and allow to cool and thicken. Taste and add more sweetener if needed.
- Into your mason jar stir in 1 tablespoon of the chia jam.
- Leave the oats in the fridge overnight or at least 4 hours.
- Before eating add 1 tablespoon chia jam, fresh blueberries and your favorite toppings.
