Blueberry Tart with Lime Curd is a dessert I went to bed thinking about how delicious it was. My oldest daughter Ariana asked her dad if she could cook dinner for Father’s Day as her gift to him. I gotta tell ya that it was a gift to me as well.

This is a recipe that I would gladly have paid for which means it is restaurant worthy. My tummy was happy!

Blueberry Tart with Lime Curd

Start by making the lime curd ahead of time and putting it in the fridge. You will want to cover the curd with plastic wrap to keep skin from forming on the top of the curd. The curd will keep for several days in the fridge just store it in an airtight container.

For the tart component, you can make a tart crust from scratch either as an individual or 1 large tart. This recipe was made using individual premade graham cracker pie crusts. The homemade taste was not missed using a store-bought crust. I think using phyllo dough shells would be nice as well. There isn’t any right or wrong way just do what works best with your schedule.

There are a couple of things that are a must fresh limes and fresh blueberries. Nothing beats the taste of fresh lime juice and zest. Check out my video on my favorite gadget to zest limes. Frozen blueberries have an excellent flavor, but the texture just isn’t as good as fresh. Since this isn’t a baked blueberry dessert fresh is best.

Perfectly balanced flavor with the mound of sweet blueberries coated with honey and tart lime curd. The lime zest bumps up the citrus flavor without any bitterness.

Blueberry Tart with Lime Curd

Perfect balance of sweet and tart with the blueberries and lime in this tart. The crust gives the texture which makes every bite lip smacking good.

Ingredients
  

Lime Curd

  • 3 lg egg yolks
  • 1 lime zested
  • 1/4 cup fresh lime juice-about 4 limes
  • 6 tbsp sugar
  • 4 tbsp unsalted butter cut into pieces-chilled

Blueberry Tart

  • 1 pkg individual graham cracker pie shells I used Keebler brand-6 to a package
  • 2 cups fresh blueberries
  • 1 tbsp honey
  • 1 lime zested

Instructions
 

Lime Curd

  • Combine yolks, lime zest. sugar and lime juice in a small saucepan. Whisk over medium heat until ingredients are combined.
  • Using a wooden spoon stir constantly, making sure not to miss the sides and bottom of the pan.
  • Cook until the curd is thick enough to coat the back of the spoon about 5-7 minutes.
  • Remove pan from heat and strain curd into a bowl.
  • Add butter a couple of pieces at a time and stir until melted and smooth.
  • Lay a piece of plastic directly over the curd surface. Let cool and then refrigerate until firm and chilled about 1 hour. This can be kept for a couple of days in an airtight container in the fridge.
  • This makes about 3/4 cup of curd.

Blueberry Tart

  • Put blueberries in a medium bowl and toss with honey.
  • Using prepared tart shells fill tart shell about 1/2 way with curd.
  • Heap blueberries on top of curd and garnish with lime zest.
  • Serve.

Notes

This would be equally as delicious with a homemade tart shell.  Could be made as individual tarts or 1 big tart.  Use phyllo shells for a different texture.  Make this your own.
