Cacio e Pepe Cauliflower
Ingredients
- 1 lg head cauliflower
- 3 tbsp butter-melted
- 2 tsp black pepper-divided
- 2/3 cup Parmesan cheese-divided
Instructions
- Preheat oven to 400'.
- Cut cauliflower into bite size florets. Line a large rimmed baking sheet with foil. Arrange cauliflower on baking sheet and drizzle with melted butter and toss to coat. Sprinkle with 1 tsp. black pepper and 1/3 cup Parmesan cheese and toss again.
- Roast cauliflower until crispy and browned for 25 minutes tossing halfway through.
- Remove from oven and transfer to serving bowl. Sprinkle with remaining pepper and cheese and toss. Serve immediately.
- This reheats perfectly in the air fryer.
