Cauliflower Oatmeal with Apples and Walnuts is a surprisingly delicious and nutritious breakfast boost. Oatmeal is a breakfast staple for many, offering a comforting and customizable base for a healthy start to the day. But if you’re looking to sneak in extra veggies and also boost the nutritional value of your morning meal, then get ready to be surprised by cauliflower oatmeal!

Yes, you read that right. Finely grated cauliflower, when cooked into oatmeal, adds a creamy texture and subtle sweetness without overpowering the flavor. Paired with the sweetness of apples and the crunch of walnuts, this unusual combination transforms into a surprisingly delicious and incredibly nutritious breakfast.

Why Cauliflower in Oatmeal?

You might be skeptical, and that’s understandable. But trust us, cauliflower adds more than just another way of sneaking a serving of vegetables. Here’s why it works:

  • Increased Volume: Cauliflower is low in calories and high in fiber, adding volume to your oatmeal without drastically increasing the calorie count. This can help you feel fuller for longer, curbing those mid-morning cravings.
  • Creamy Texture: When grated finely and cooked, cauliflower softens and blends seamlessly into the oatmeal, adding a subtle creaminess that’s surprisingly satisfying.
  • Nutritional Powerhouse: Cauliflower is packed with vitamins, minerals, and antioxidants, making it a nutritional powerhouse. Adding it to your oatmeal boosts the overall health benefits of your breakfast.
  • Hidden Veggies: For picky eaters (adults included!), this is a fantastic way to sneak in extra vegetables without sacrificing flavor.

  • 1 tablespoon maple syrup (or other sweetener, optional)

Instructions:

  1. Combine Ingredients: In a small saucepan, combine the rolled oats, grated cauliflower, milk, water, cinnamon, and salt.
  2. Cook: Bring the mixture to a boil over medium heat, then reduce heat to low and simmer for 5-7 minutes, stirring occasionally, until the oatmeal has thickened and the cauliflower is tender.

Tips and Variations:

  • Grate the Cauliflower Finely: Use a box grater to grate the cauliflower as finely as possible. This will ensure it cooks evenly and blends seamlessly into the oatmeal.
  • Customize Your Toppings: Get creative with your toppings! Try adding berries, seeds, nut butter, shredded coconut, or a dollop of yogurt for extra flavor and nutrition.
  • Spice it Up: Experiment with different spices like nutmeg, cardamom, or ginger for a warm and cozy flavor.
  • Make it Vegan: Use non-dairy milk like almond milk, soy milk, or oat milk to make this recipe vegan. You can also replace the maple syrup with agave nectar or your favorite vegan sweetener.
  • Leftovers: This oatmeal can be made ahead of time and stored in the refrigerator for up to 3 days. Reheat in the microwave or on the stovetop, adding a little extra liquid if needed.
