Cauliflower Tacos

Cauliflower tacos puts a vegetarian spin on taco Tuesday. Roast the cauliflower in the oven and serve with a spicy slaw.

I love cauliflower in as many ways as I can fix it. These cauliflower tacos are just simply delicious. Topping them with the spicy slaw adds tons of flavor and texture.

Simple seasonings of chili powder, ground coriander, cumin, cayenne, salt with olive oil, lime juice, honey and tomato paste for the cauliflower. Roast the cauliflower and bell pepper in the oven or the air fryer.

Serve the roasted cauliflower and bell peppers on tortillas. I prefer corn tortillas but use what you like.

To make the spicy slaw you will need purple cabbage, red bell pepper, jalapeno, and cilantro. To give the slaw the creamy and zesty flavor combine kewpie mayo, lime juice and salt.

Mix it with the veggies and you have a super simple but perfect addition to the cauliflower to top your tacos.

I had store bought corn tortillas on hand so that is what I used. If you have the time, I highly recommend making your own corn tortillas. Ingredients
  

Cauliflower Tacos

  • 2 tbsp olive oil
  • 1 tbsp lime juice-plus wedges for garnish
  • 1/2 tsp honey
  • 1 tbsp tomato paste
  • 1 tsp chili powder
  • 1/2 tsp ground coriander
  • 1/2 tsp cumin
  • 1/8 tsp cayenne pepper
  • salt to taste
  • 1 medium head cauliflower
  • 1 bell pepper
  • 8 corn tortillas

Spicy Slaw

  • 2 tbsp lime juice
  • 2 tbsp Kewpie mayo
  • 1/4 head purple cabbage
  • 1 red bell pepper
  • 1 jalapeno
  • 1/4 cup cilantro plus garnish

Instructions
 

Cauliflower Tacos

  • Preheat oven to 425' or if using the airfryer set to 400'.
  • In a large bowl whisk together oil, lime juice, honey, tomato paste, spices and 1/2 tsp. salt. Set aside.
  • Core cauliflower and cut into bite size florets. Slice bell pepper into strips. Add both cauliflower and bell pepper into bowl with sauce you set aside. Toss to coat.
  • Roast on baking sheet for 18-22 minutes until golden and tender. If using the airfryer check and rotate or shake so it doesn't burn.
  • Spoon cauliflower and peppers into tortillas and top with slaw. Serve with lime wedges and chopped cilantro.

Spicy Slaw

  • Whisk lime juice, mayo and 1/2 tsp. salt together in a large bowl. Set aside.
  • Slice cabbage, bell pepper and jalapeno very thin. Then add to sauce and toss to coat well. Taste and add more salt if needed.
  • Add in cilantro before serving.
