Cheesy Lasagna Soup
Ingredients
- 8 Oz Ricotta cheese
- 2 Oz Parmesan cheese-grated
- 1/8 Tsp Nutmeg
- 1 1/4 Tsp Salt-divided
- 1 Tbsp Olive oil
- 1 Lb Ground beef
- 1 Onion-chopped
- 3 Cloves Garlic-minced
- 2 15oz Cans diced tomatoes
- 6 Cups Chicken stock
- 1 1/2 Tbsp Sugar
- 8 Oz Lasagna noodles-broken into pieces
- 1 Tbsp Red wine vinegar
- 4 Oz Mozzarella cheese-shredded
- 1/4 Cup Basil
Instructions
- In a medium bowl combine ricotta, Parmesan and 1/4 tsp. salt. Cover and put in fridge.
- Heat oil in a Dutch oven over medium heat. Add beef, breaking up as it cooks, until browned, about 3-5 minutes. Remove beef with a slotted spoon and place on a paper towel lined plate.
- Add onion to Dutch oven with the fat left in and cook until softened, about 5 minutes. Add garlic cook and stir constantly, about 1 minute. Stir in tomatoes and broth, bring to a boil over high heat. Stir in sugar and remaining salt.
- Add lasagna noodles pieces and cook until al dente, about 8 minutes. Stir in cooked ground beef and cook for a couple minutes. Remove from heat and stir in vinegar.
- Ladle soup into bowls and top with shredded mozzarella and dollops of ricotta mixture. Top with basil and serve.
