Chopped Sub Salad

The Chopped Sub Salad is a bold, satisfying, and flavor-packed twist on your favorite Italian sub sandwich—minus the bread. Perfect for low-carb lifestyles or anyone craving a lighter yet hearty meal. This salad is loaded with all the best deli meats, crisp veggies, tangy pickled additions, and zesty Italian dressing that you’d expect from a classic hoagie.
This salad starts with a base of finely chopped romaine or iceberg lettuce for a crunchy foundation. Layered with thin slices of deli meats, and mozzarella cheese, all cut into bite-sized pieces to mimic the chopped style. Tomatoes, red onion, and pepperoncini bring vibrant color and texture.
What truly ties everything together is the bold Italian dressing. Whether homemade with olive oil, red wine vinegar, garlic, and herbs or a high-quality store-bought version, the dressing coats each ingredient, enhancing every bite with a savory zing. Added Kewpie mayo gives the right amount of creaminess.
This Chopped Sub Salad is endlessly customizable—swap out meats or cheeses to your liking, or make it vegetarian with chickpeas and extra veggies. It’s perfect as a main dish for lunch or dinner, or served family-style at gatherings and potlucks. It’s a true crowd-pleaser that offers the nostalgia of your favorite sandwich shop sub in a fresh, wholesome bowl.
Make it ahead for meal prep or toss it fresh before serving—either way, it’s a flavorful, satisfying salad. That proves you don’t need bread to enjoy the best parts of a sub sandwich.
