Such a refreshing vibrant salad. This cucumber ginger salad is assertive and goes best with fish, chicken or a condiment to a noodle bowl.

Ingredients
  

  • 1 1 inch ginger-peeled
  • 1 English cucumber-halved and sliced thin
  • 1/4 cup apple cider vinegar
  • 3 tbsp brown sugar
  • 3 tbsp soy sauce
  • 2 tbsp olive oil
  • 1 tbsp sesame oil
  • 2 tsp tables salt
  • 1/2 tsp red pepper flake

Instructions
 

  • Slice ginger into thin coins and then slice into matchsticks.
  • Toss cucumber slices, vinegar, sugar, soy sauce, olive oil, sesame oil, salt, pepper flakes, and ginger in a bowl until thoroughly combined. Let sit for 1 hour stirring occasionally.
  • Serve with a slotted spoon.
