Cucumber Ginger Salad
Such a refreshing vibrant salad. This cucumber ginger salad is assertive and goes best with fish, chicken or a condiment to a noodle bowl.

- 1 1 inch ginger-peeled
- 1 English cucumber-halved and sliced thin
- 1/4 cup apple cider vinegar
- 3 tbsp brown sugar
- 3 tbsp soy sauce
- 2 tbsp olive oil
- 1 tbsp sesame oil
- 2 tsp tables salt
- 1/2 tsp red pepper flake
Slice ginger into thin coins and then slice into matchsticks.
Toss cucumber slices, vinegar, sugar, soy sauce, olive oil, sesame oil, salt, pepper flakes, and ginger in a bowl until thoroughly combined. Let sit for 1 hour stirring occasionally.
Serve with a slotted spoon.
