Cucumber Ginger Salad
Ingredients
- 1 1 inch ginger-peeled
- 1 English cucumber-halved and sliced thin
- 1/4 cup apple cider vinegar
- 3 tbsp brown sugar
- 3 tbsp soy sauce
- 2 tbsp olive oil
- 1 tbsp sesame oil
- 2 tsp tables salt
- 1/2 tsp red pepper flake
Instructions
- Slice ginger into thin coins and then slice into matchsticks.
- Toss cucumber slices, vinegar, sugar, soy sauce, olive oil, sesame oil, salt, pepper flakes, and ginger in a bowl until thoroughly combined. Let sit for 1 hour stirring occasionally.
