Farro Spinach Grain Bowl
Ingredients
Grain Bowl
- Salt for cooking farro
- 1/2 Cup Farro
- 12 Brussel sprouts-halved
- 4 Carrots-chopped
- 1 Shallot- sliced
- 2 Tbsp Olive
- 1/2 Tsp Salt
- 1/4 Tsp Pepper
- 2 Big handfuls Spinach
- 2 Hard boiled eggs
- Chopped Parsley-garnish
Tahini Sauce
- 1 Clove Garlic
- Salt
- 1/4 Cup Tahini
- 1 1/2 Tbsp Lemon juice
- 2 Tsp Honey
- Pepper
- 2 Tbsp Water
Instructions

- Preheat oven to 425
- Bring a pot of salted water to boil. Add Farro and cook according to package directions.
- On a rimmed baking sheet, combine Brussel sprouts, carrots, and shallots. Drizzle with olive oil and season with salt and pepper. Toss well. Roast vegetables turning a couple during cooking. Roast until tender and browned. About 30-40 minutes.
Tahini Sauce
- Use salt to crush the garlic in a paste. Transfer to a small bowland whisk in tahini, lemon juice, honey and pepper. Stir continuously while adding in the water. Mix until dressing is smooth and pourable.
- Drain farro and add to each bowl. Arrange vegetables on top of Farro then add spinach. Cut eggs in half, season with salt and pepper then add to bowl.
- Drizzle tahini dressing over the bowl ingredients and top with parsley.
