Fresh Corn and Basil Salad
Fresh corn and basil salad is a refreshing summer dish that is perfect to take to a potluck or picnic. This dish gets better as it sits so don’t be afraid to make it ahead.

Arizona is hot in the summer so when I find a tasty side dish it becomes a staple in my house. Make it ahead to make your life easier. If you having a BBQ just grill the corn and use the same hack to cut the corn off the cob. You can serve this Fresh Corn and Basil Salad cold or leave it out and serve at room temperature. It’s the perfect dish to have ready so you can prep the rest of your meal.
In my garden I have basil and tomatoes growing. Using fresh ingredients not only makes me happy but makes this corn and tomato salad taste better. If you don’t have basil available just substitute cilantro. This recipe is vegan but if you find yourself just craving some cheese add feta cheese, mozzarella balls or cotija crumbles.
