Ingredients
  

  • Cooking spray
  • 2 Tbsp Olive oil
  • 3/4 Cup Onion-chopped
  • 3 Cloves Garlic-minced
  • 2 Cups Cauliflower rice
  • 1 Cup Monterey jack cheese-shredded
  • 1 Cup Sharp cheddar cheese-shredded
  • 4 Oz Canned green chiles-chopped
  • 1/2 Cup Greek yogurt-plain
  • 1/2 Cup Milk-I used almond
  • 1 1/2 Tsp Salt
  • 1/2 Tsp Black pepper

  • Chile powder
  • Green chile powder
  • Sliced radish-garnish
  • PIckled jalapeno-garnish
  • Cilantro-garnish
  • Shredded chicken

Instructions
 

  • Spray 8×8 casserole dish with cooking spray. Preheat oven to 325'
  • Cook frozen cauliflower rice according to package directions. Discard any liquid. Set aside.
  • Heat olive oil in sauté pan over medium heat and add onions. Cook for 5 minutes then add garlic and cook for 1 more minute. Turn heat down to medium low and add milk, stirring constantly until reduced by half. Set aside.
  • In a large bowl combine rice, 1/2 cup of each cheese, chiles, yogurt, veggies, and seasonings. Stir well to incorporate all ingredients. Spread mixture into prepared dish and top with remaining cheese.
  • Bake at 325' for 25 minutes. Let stand for 5 minutes before serving.
