Once the chicken legs are seared, remove them from the pot. Add chicken broth, water, or stock to deglaze the bottom. Scraping the bottom prevents the burn warning. It also incorporates those flavorful browned bits into the cooking liquid. Place a trivet or rack inside the pot. Arrange the chicken legs on the rack for even cooking and easy removal later.

Seal the Instant Pot lid and set it to high pressure. Cook the chicken legs for about ten minutes. After cooking, allow a natural release for five minutes. Then switch to a quick release to release remaining pressure.

Check the chicken with a thermometer. It should reach an internal temperature of 165°F to be safe to eat. The chicken legs will be tender, juicy, and packed with flavor. You can serve them directly or crisp the skin under the broiler. Broiling for a few minutes adds extra crunch and caramelization. This final step enhances both flavor and presentation.

Ingredients
  

  • 4 chicken leg quarters
  • 1 cup water or chicken broth
  • your favorite seasoning, rub or sauce

Instructions
 

  • Place your liquid in your instant pot. Add the trivet to your instant pot liner.
  • Stack the chicken legs in a bookshelf manner. Place the thickest part of the chicken leg resting on the trivet. Facing the leg upwards toward the lid.
  • Lock the lid and move the valve to the sealing position. Set to manual on high for 20 minutes.
  • Once the IP beeps, let it naturally release for 8 minutes. Release any remaining pressure.
  • Set the oven to broil and broil chicken legs until golden brown.
