Overnight Growing Oatmeal is a great way to start your day. Make it the night before and grab it on your way out the door. It's great hot or cold.
Ingredients
- 1 1/4 Cups Almond milk-unsweetened
- 1 1/4 Cups Water
- 1/2 Cup Old fashioned oats
- 2 Tsp Monkfruit or no calorie sweetener
- 1/4 Tsp Vanilla
- Pinch Salt
TOPPINGS
- Fresh fruit
- Greek yogurt
- Nuts
- Cinnamon
- Chia seeds
- Jam
Instructions
- In a pot combine all ingredients and stir well.
- Bring to a boil and reduce to a simmer. Cook and stir until creamy and thickened, about 15 minutes. It week thicken more as it sits in the fridge.
- Transfer to your container and let cool completely. Then put in the fridge for at least 5 hours.
- Mix well before serving. Heat if you prefer.
- Top with your favorite toppings and serve.
