Pad Mama

Pad Mama is a brand of Thai instant noodles. This is a quick dish using instant noodle ramen packets. Along with fresh produce and some seasonings plus the seasoning packets from the instant noodles.

Start with a humble packet of instant noodles. In Thailand the most well-known brand is called Mama. Hence the name Pad Mama. This is the Japanese equivalent to Top Ramen. Who hasn’t had Top Ramen in college or when on a budget. I keep Top Ramen on hand when I am craving comfort food. I found this recipe in the Better Homes and Garden August 2021 issue.

This cooks in one pot (skillet or wok) so clean up is easy. You can cook the noodles in the wok or use a separate pot while preparing the rest of the Pad Mama.

Change up the vegetables but be sure to keep the cabbage and tomatoes. I do love the combination of vegetables in this recipe.

If you don’t like things too spicy don’t add all the seasoning packet. If you are adventurous add in the whole packet otherwise, just keep adding the side packet until it gets to the heat level you like.

The word pad in Thai means stir-fry. There are so many good things about this recipe the first is how quick this comes together. Then you can customize it by making it vegetarian and the flavor is fantastic.

Ingredients
  

  • 3 2oz Thai instant noodles Mama brand if you can find it
  • 2 Tbsp Vegetable oil
  • 1 Tbsp Garlic-minced
  • 1/2 Lb Ground pork
  • 1 Tbsp Fish sauce
  • 1 Tbsp Soy sauce
  • 1 Tbsp Oyster sauce
  • 1 Tsp Sugar
  • 1/2 Cup Onion-halved and sliced
  • 1/2 Cup Broccoli-roughly chopped, Chinese if you can find it
  • 1 Carrot-julienned
  • 1 Plum tomato-chopped small
  • 1/2 Cup Bean sprouts
  • 2 Scallions-green only chopped
  • Ground white pepper
  • Cilantro-chopped

Instructions
 

  • Bring a pot of wager to boil or use your wok. Cook long enough for the noodles to soften about 1 minute. Drain noodles shaking off as much water as you can.
  • Stir soy sauce, fish sauce, oyster sauce and sugar together in a small bowl.
  • In a wok, heat 2 tablespoons of oil over medium heat. Add onions and cook to your desired doneness. I don't like raw onions. Add broccoli and carrots, cook for 2 minutes. Add pork and cook for about 3 minutes until browned. Add garlic and cook for 30 seconds.
  • Add sauce to wok and stir to combine. Add the drained noodles and tomatoes stirring until noodles have absorbed some of the sauce. Stir in bean sprouts and remove from the heat.
  • Season with white pepper and as much of the seasoning packets to your taste. Garnish with cilantro and scallions. Serve.
