Ingredients
  

  • 2 tbsp pistachios-toasted and finely chopped
  • 2 tbsp panko breadcrumbs
  • 2 tbsp parsley-minced
  • 2 6oz salmon filets
  • 1/4 tsp salt
  • 4 tsp Greek yogurt
  • cooking spray

Instructions
 

  • If using a basket type airfryer make a foil sling to lift out the salmon after it's cooked.
  • Combine the pistachios, panko, and parsley in a shallow plate. Pat the salmon dry with paper towels and sprinkle with salt.
  • Spread the yogurt evenly over the flesh side of the Salmon. Dredge the yogurt side into the pistachio mixture, pressing gently to completely to coat. If you have extra sprinkle over the salmon and press down.
  • Place the salmon skin side down in the airfryer, spaced evenly apart. Lightly spray the salmon with cooking spray. Set the temperature to 400' and cook until the coating is lightly browned. Check the temperature 125' to 130' after 10 minutes.
  • Remove skin from the salmon before serving
