Poblanos Rajas Cream and Corn

Poblanos Rajas Cream and Corn is a Mexican dish using roasted poblanos. It’s a great side dish but would be absolutely delicious as an appetizer with chips.

A savory Mexican side dish made with roasted poblanos, onions, corn and crema. Char the chiles then peel and deseed them. Cut them into strips. Cook the onions until softened and them just add in the rest of the ingredients.

Poblanos Rajas Cream and Corn

Poblanos Rajas is a Mexican dish using roasted poblanos. It's a great side dish but would be absolutely delicious as an appetizer with chips.

Ingredients
  

  • 1 lb poblano chiles
  • 2 tbsp butter
  • 1/2 onion-slice into 1/4" slices
  • 3/4 cup fresh corn
  • 2 cloves garlic-minced
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 3/4 cup Mexican crema

Instructions
 

  • Roast poblanos until charred and then put in a bowl and cover with a lid or plastic wrap. When cool enough to handle peel poblanos, stem and seed them. Cut the poblanos into 1/2" strips. Poblanos can be stored in fridge for 3 days if not using right away.
  • Melt butter in a 12" nonstick skillet over medium heat. Add onion and cook, stirring occasionally until onions are soft, about 6-8 minutes. Add corn and cook for 5 minutes. Add garlic and cook until fragrant, about 30 seconds.
  • Add poblanos (rajas), salt and pepper and cook until heated through. Add crema and cook until crema thickens, about 2-3 minutes. Serve immediately!
