Sauteed Broccoli with Raisins and Parmesan
Sauteed broccoli with raisins and Parmesan is crunchy, sweet and salty. The pepper flakes add a little heat. A delicious side dish for so many recipes.
Ingredients
- 3 tbsp olive oil
- 2 tbsp water
- 3 cloves garlic-minced
- 1 tsp fish sauce
- 1/2 tsp salt
- 1/8 tsp red pepper flakes
- 1 lb broccoli cut into 1 ½ florets
- 1/4 cup golden raisins
- 1/4 cup shredded Parmesan cheese
- lemon wedges-garnish
Instructions
- Combine oil, water, garlic and fish sauce, salt and pepper flakes in a 12" nonstick skillet. Add broccoli and toss to coat with oil mixture. Cover and cook over medium heat until broccoli is tender about 5 minutes.
- Uncover and cook until water is evaporated and broccoli is lightly browned about 5 minutes. Stirring halfway through cooking.
- Take off the heat and stir in the raisins. Season with salt to taste.
- Transfer to serving platter and sprinkle with Parmesan. Serve with lemon wedge garnish.
