Ingredients
  

  • 1 Spaghetti squash
  • Olive oil-drizzle over squash
  • Salt and pepper-spaghetti squash
  • 2 Tbsp Olive oil
  • 1 Tsp Salt
  • 2 Eggs-beaten
  • 1/2 Cup+ Grated Parmesan plus 2 tbsp
  • 1 Onion-chopped
  • 1 Zucchini-chopped
  • 2 Cloves Garlic-minced
  • 1 Lb Ground beef
  • 1 Tsp Dried oregano
  • PInch Red pepper flakes
  • 2 Tbsp Tomato paste
  • 8 Oz Tomato sauce
  • 1/2 Cup Water
  • 1 Cup Ricotta cheese
  • 1 Cup Mozzarella cheese-grated
  • Fresh basil-chopped for garnish

Instructions
 

  • Preheat oven ro 425'
    Cut squash in half the long direction and scoopout the seeds. Drizzle with olive oil, salt and pepper. Bake squash side down in a baking dish for 40 minutes.
  • Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add onion and cook for 3 minutes then add zucchini and cook until softened, about 5 minutes. Add garlic and cook 1 minute.
  • Add beef to skillet with onions and crumble while cooking, season with 1/2 teaspoon salt. Cook for 4 minutes. Stir in oregano and pepper flakes and cook for 2 minutes. Add tomato paste and 1/2 cup water, stirring into beef while cooking. After paste is incorporated into meat add tomato sauce and 1/4 teaspoon salt. Simmer for 5 minutes until thickened. Season to taste with salt.
    If you have a favorite jarred pasta sauce use that in place of making the sauce.
  • After squash cools remove squash from shell using a fork. Place squash in a large bowl and toss with 2 tablespoons of olive oil and 1 teaspoon salt. Add beaten eggs and 1/2 cup parmesan cheese and toss.
  • To assemble the pie press the spaghetti squash mixture into the bottom of a greased pie plate. Bake crust at 375' for 40 minutes. Remove from oven and layer the ricotta cheese on top of crust. Top the ricotta cheese with the meat sauce. Finally add the mozzarella cheese to the top .
  • Bake the pie for 30 minutes. Check often to make sure the pie doesn't get too brown. Cover with foil if needed. Increase the temp to 425' and bake for an additional 10 minutes to brown the cheese. Remove from the oven and cool for 10 minutes.
  • Top with additional parmesan cheese and basil. Cut into wedges and serve.
