One of the reasons I love this recipe so much is how easy it is to put together. My favorite reason is the taste and it is a healthier pasta alternative. I used Marinara that I made and froze but use what you have on hand-jarred is fine. If you are looking to change up your diet or lose some of the Covid pounds you won’t be disappointed.
Spaghetti Squash Turkey Marinara
Hearty "spaghetti" dinner with ground turkey and spaghetti squash is so satisfying. You won't miss the carbs.
Ingredients
- 1 lg spaghetti squash
- 1 lb ground turkey
- olive oil
- 1 bell pepper-chopped
- 1 onion-chopped
- salt
- pepper
- 1 tbsp fresh oregano-chopped
- 3 cloves garlic-minced
- marinara
- fresh basil-garnish
- parmesan shredded-garnish
Instructions
- Cook spaghetti squash in the microwave-see notes.
- Cook bell pepper and onion in olive oil add salt and pepper until translucent, about 6 minutes on medium. Add garlic, oregano and basil, cook 1 more minute.
- Add turkey and cook 8 more minutes adding oil if needed.
- Add marinara sauce. I used some I had frozen but just use whatever you have on hand. Simmer about 10 minutes.
- While your sauce is simmering shred the spaghetti sauce and add salt and pepper.
- Plate the squash and ladle sauce over the squash. Garnish with parmesan and fresh basil.
