Strawberry Compote
Sweet and simple, strawberry compote is made by gently simmering fresh or frozen strawberries with sugar and a splash of lemon juice.
Ingredients
- 1/3 cup sugar or monkfruit
- 1 tbsp cornstarch
- pinch salt
- 1/4 cup water
- 1 pound strawberries-hulled and quartered
- 2 tsp lemon juice
Instructions
- Whisk cornstarch, sugar and salt in a medium saucepan until no lumps remain. Whisk in water. Stir in strawberries until evenly coated.
- Cook over medium heat, stirring occasionally, Until thickened, this should take about 5 minutes.
- Transfer to a bowl and stir in lemon juice. Let cool completely and serve. Store in the fridge in a container for 3 days.
