Sweet and simple, strawberry compote is made by gently simmering fresh or frozen strawberries with sugar and a splash of lemon juice.

Ingredients
  

  • 1/3 cup sugar or monkfruit
  • 1 tbsp cornstarch
  • pinch salt
  • 1/4 cup water
  • 1 pound strawberries-hulled and quartered
  • 2 tsp lemon juice

Instructions
 

  • Whisk cornstarch, sugar and salt in a medium saucepan until no lumps remain. Whisk in water. Stir in strawberries until evenly coated.
  • Cook over medium heat, stirring occasionally, Until thickened, this should take about 5 minutes.
  • Transfer to a bowl and stir in lemon juice. Let cool completely and serve. Store in the fridge in a container for 3 days.
