These waffles will be a showstopper on your table. Need a quick meal to get on table and have fun too, these Thanksgiving stuffing waffles will make everyone happy.

I love using up leftover turkey after Thanksgiving. This is the first time I had enough turkey to add a new “after the bird” recipe to my list. My family has their list of favorites, and this has been added to the list. The hubby’s favorite is a layered casserole using stuffing, gravy, turkey and cranberry sauce. My youngest daughter’s favorite is the turkey panini with Swiss cheese, cranberry sauce, apricot Dijon spread.

I made my stuffing outside the turkey this year and it makes it drier and crunchy which is just the way I like it. You will need to use some chicken broth to make it slightly wet but not like a batter. Then the egg will act as the binder and hold it together. Just be sure to spray your waffle maker with cooking spray so the waffles don’t stick.

The best part of this recipe is you can continue to use up your leftovers. I put my waffle on the bottom, then a dollop of mashed potato, slices of turkey and top with gravy. Certainly, add your favorites like cranberry sauce and some veg.

Thanksgiving Stuffing Waffles

Ingredients
  

  • 4 cups leftover stuffing
  • 4 tbsp chicken broth-might need more depending on how dry your stuffing is
  • 3 eggs-beaten
  • salt-pinch
  • cooking spray

Instructions
 

  • Preheat waffle maker.
  • In a large bowl mix stuffing and chicken broth, breaking up large pieces of stuffing. Add broth until it gets to your desired consistency.
  • Add eggs and salt then mix until well combined.
  • Spray the waffle iron with cooking spray on both sides.
  • Cook your waffles until cooked through about 10 minutes.
  • Serve with your favorite toppings. I layered mine with mashed potatoes, turkey slices and topped with gravy. I added roasted carrots on the side.
