I was listening to a podcast with Molly Yeh from Girl Meets Farm. You can find the link here. The particular episode I listened to had wheat berries as a featured ingredient. Molly even sent her Hubby Nick out to the fields to grab her some wheat berries. They have a farm on the Minnesota-North Dakota border. I was intrigued to find out what wheat berries are so of course I took the deep dive. Then went on a quest to find some.

Wheat Berry Salad

I have a great local store that has bulk bins with so much good stuff. Lo and behold in one of those bins was wheat berries. So, I grabbed myself a bag and filled it up.

Wheat berries are the original source of wheat before any refinement. You use it just like you would any other whole grain. It is chewy, nutty and high in fiber.

If you are vegetarian just leave off the protein. It is still a spectacular looking salad.

Sous Vide Frozen Chicken Breast

Ingredients
  

Salad

  • 1 cup wheat berries-uncooked
  • 1 large apple-chopped
  • 2 oranges-segemented
  • 1/2 cup dried cranberries
  • 2 cups kale-chopped
  • 1 cup pecans-toasted

Dressing

  • 3 tbsp olive oil
  • 3 tbsp honey
  • 1 tbsp apple cider vinegar
  • 1 tbsp lemon juice
  • salt and pepper to taste

Protein

  • 3 chicken breast-sliced after sous viding

Instructions
 

  • Make the dressing and set aside. Combine all of the dressing ingredients and whisk or shake in a mason jar. If making it far in advance keep it in the fridge.
  • In a large heavy bottomed pot cook the wheat berries. Bring to a boil by adding 2" of water above the wheat berries. Boil uncovered for 1 hour and check for doneness. They were a perfect tenderness for me. Drain well and cool.
  • In a large bowl combine the cooled cooked wheat berries, apples, orange segments, cranberries, and kale.
  • Toss with salad dressing. Season with salt and pepper to taste.
  • Sprinkle with toasted pecans. If planning on making enough salad to have as leftovers only add pecans to what you are eating right away.
  • This salad will stay fresh for 1-2 days.
