Airfryer Frittata
Airfryer frittata is a delicious crustless quiche. An egg bake with whatever cheese, meat and veggies you love.

- 4 eggs-beaten
- 1 cup gruyere cheese-grated
- 1/4 cup milk-I use almond milk
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
- 4 leeks-sliced
- 1 red bell pepper-diced
- 1/2 bunch asparagus-cut into 1" pieces
- pinch nutmeg
- 1/2 cup parsley-chopped
- chopped chives-garnish
Heat a large skillet with oil over medium heat for 3 minutes. Add bell pepper and cook for 5 minutes. Add asparagus, salt, pepper and cook for 2 minutes. Let cool for 10 minutes.
In a medium bowl beat eggs with milk and nutmeg, then fold in cheese along with leeks and cooled veg.
Preheat airfryer to 350'. Pour mixture into a greased casserole dish that fits into your airfryer.
Cook in the airfryer for 30 minutes. Watch to make sure it doesn't get too dark. Cover with foil if it gets too dark.
Remove from the airfryer and let sit 10 minutes before cutting. It cuts even better when you refrigerate, reheat and serve the next day.
Serve with sliced tomatoes or a side salad.
