Ingredients
  

  • 4 eggs-beaten
  • 1 cup gruyere cheese-grated
  • 1/4 cup milk-I use almond milk
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 4 leeks-sliced
  • 1 red bell pepper-diced
  • 1/2 bunch asparagus-cut into 1" pieces
  • pinch nutmeg
  • 1/2 cup parsley-chopped
  • chopped chives-garnish

Instructions
 

  • Heat a large skillet with oil over medium heat for 3 minutes. Add bell pepper and cook for 5 minutes. Add asparagus, salt, pepper and cook for 2 minutes. Let cool for 10 minutes.
  • In a medium bowl beat eggs with milk and nutmeg, then fold in cheese along with leeks and cooled veg.
  • Preheat airfryer to 350'. Pour mixture into a greased casserole dish that fits into your airfryer.
  • Cook in the airfryer for 30 minutes. Watch to make sure it doesn't get too dark. Cover with foil if it gets too dark.
  • Remove from the airfryer and let sit 10 minutes before cutting. It cuts even better when you refrigerate, reheat and serve the next day.
  • Serve with sliced tomatoes or a side salad.
