Cedar Plank Brie with Berries

If you’re looking for a show-stopping appetizer that blends rustic charm with elegant flavor, Cedar Plank Brie with Berries is it. This recipe takes decadent brie, pairs it with fresh berries, and infuses with a smoky note from a cedar plank. The result’s a dish that’s elevated and comforting—perfect for gatherings. Also, holiday spreads, or anytime you want to impress guests with minimal effort.
The magic begins with the cedar plank. Soaking in water for an hour ensures it doesn’t scorch, but instead releases a gentle smokiness once on the grill or the oven. As the brie warms, the plank infuses its delicate woodsy aroma into the cheese. When you slice into the softened wheel, it flows luxuriously. Ready to be scooped up with crackers, crostini, or slices of apple and pear.
Topping the brie with fresh berries—think blueberries, raspberries, or sliced strawberries—adds brightness and balance. Their tart-sweet flavor cuts through the richness of the cheese, creating the perfect bite. A drizzle of honey ties it all together, offering a hint of floral sweetness and a glossy finish. For a little extra texture, sprinkle over some toasted pecans or walnuts.
What makes this recipe particularly appealing is its flexibility. Use whatever berries are in season, swap in a fruit compote if fresh berries aren’t available. Add herbs like thyme or rosemary for a more savory twist. The preparation is quick, but the presentation is stunning, making it an ideal choice when you want maximum impact with minimal stress.
Cedar Plank Brie with Berries is more than just an appetizer—it’s a sensory experience. The aroma of the cedar, the bubbling cheese, the jewel-like berries, and the way it all comes together on the plate will have your guests in anticipation. Pair it with a glass of chilled rosé or sparkling wine, and you’ve got an unforgettable start to any meal.

- crackers-bread-fruit for serving
Instructions
- Place a cedar plank in a bowl or baking dish and soak for at least 1 hour. Preheat oven to 375' or grill to medium high.
- In a medium bowl add blackberries and crush with a fork. Add strawberries, vinegar, sugar, thyme, big pinch salt and pinch of pepper. Stir, and let stand for 5 minutes.
- Remove plank from water and let drain. To keep your oven clean I would put the plank on a rimmed cookie sheet.
- Trim top off brie and place on top of cedar plank. Top brie with berry mixture, Reserve some of the juice for serving. Sprinkle the almonds on top of berries.
- If using the grill place the plank right on the grill and close the lid. If using the oven put the cookie sheet into the oven. Cook about 11 minutes until brie is softened and warmed through.
- Watch the last 2 minutes of cooking so the brie doesn't completely run out of the rind. Remove from the oven.
- Drizzle the reserved berry juice over the top and garnish with the thyme leaves.
