Spaghetti Squash Breadsticks

Looking for a low carb alternative to breadsticks try these spaghetti squash breadsticks.

After removing the spaghetti squash from the Instant Pot let it cool long enough to be able to handle it. See the video below on how to cook spaghetti squash in the Instant Pot. Slice it vertically for shorter strands but if you prefer longer strands like spaghetti then cut it horizontal.

Scoop out the seeds and then using a fork scrape the flesh into the strands. Use immediately or put it into the fridge to use when you are ready.

If you are gluten free but craving bread this will do the trick. It’s a really easy recipe to make. The best part is it’s a low-calorie recipe, but you would never know it by the taste. I prefer this to actual bread. I did use all-purpose flour for this recipe, but if you want it gluten free use almond flour just add an extra tablespoon.

Besides the microwave my favorite way to cook spaghetti squash is the Instant Pot. It is incredibly easy, and you leave it whole which means it is so much easier to cut open. Spaghetti Squash Breadsticks

Low carb alternative to breadsticks using spaghetti squash.

Ingredients
  

  • 2 cups spaghetti squash-cooked and chopped
  • 1 egg
  • 1 cup mozzarella cheese-shredded and divided
  • 1 tsp Italian seasoning
  • 3 tbsp all-purpose flour
  • 3 tbsp Parmesan cheese-shredded
  • 1 tsp parlsey-chopped

Instructions
 

  • Preheat oven to 450'. Line baking sheet with parchment paper.
  • Use a tea towel to wring out as much liquid from your spaghetti squash as you can.
  • In a large bowl add spaghetti squash, 1/4 cup mozzarella, Italian seasoning, and flour. Mix until thoroughly combined.
  • Put spaghetti squash onto baking sheet and form into a oval or round. Use your hands to shape and flatten to 1/4"
  • Bake for 15 minutes until edges are golden brown and surface is dry to touch. Flip over and sprinkle 3/4 cup mozzarella cheese and 1/4 cup Parmesan cheese on top.
  • Lower oven temp to 425'. Bake for an additional 6-8 minutes until cheese is melted and blisters. Remove from oven and garnish with parsley.
  • Slice and serve.

Notes

Replace the all-purpose flour with t tbsp of almond flour to make it gluten free.
