Pork Chops with Mango Salsa
Pork chops with mango salsa is just what you need for your next dinner party. Grill it or cook it in your cast iron skillet for an upscale summer meal.
This would be a perfect recipe for the grill but mine is out of commission. So, I grabbed my favorite well-seasoned cast iron pan and cooked these pork chops to perfection.
Coat the chops with this homemade rub and let rest. While the pork is resting make the mango salsa. If you make more salsa, then you need for this recipe it goes well with chips.

Ingredients
Pork Chops
- 2 pork chops-used bone in 3/4" thick
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp pepper
- 1/4 tsp chili powder
- 1/2 tsp paprika
- 1/4 tsp brown sugar
- 1/2 tsp salt
- big pinch cayenne pepper
- olive oil-cook pork
Mango Salsa
- 1 ripe mango-diced
- 1 cup grape tomatoes-chopped
- 1 jalapeno-diced small
- 1/4 red onion-diced small
- 1/2 cup cilantro-chopped
- 1 tsp lime juice
- 1 tsp olive oil
- 1/4 tsp salt
- 1/4 tsp pepper
Instructions
Pork Chops
- Mix all the ingredients in a bowl except the pork chops. Sprinkle the rub on both sides of the pork chops and let sit out for 20 minutes while making the salsa.
- Add a couple tablespoons of oil to a cast iron skillet and cook over medium for 6-7 minutes per side. The temperature should be 145'
- Let rest for 5 minutes.
Mango Salsa
- Mix all the ingredients together in a bowl and taste to see if you need to adjust seasoning. I dice the jalapeno and onion very small. Keep in the fridge until ready to serve.
Serve
- Plate pork chops and top with mango salsa or serve separately to let your guests add as much salsa as they like.
