Chilaquiles Verdes
Ingredients
- 2 Tbsp Olive oil
- 1 Onion-chopped
- 2 Cloves Garlic-minced
- 2 Cups Salsa verde-homemade or store bought
- 1 Small Can green enchilada sauce or homemade
- 1/4 Cup Green chiles-chopped
- 2 Cups Cooked chicken or turkey
- Tortilla chips or leftover tostada shells
- Queso fresco or cotija cheese
- 4 Eggs
- Fresh tomatoes chopped-garnish
- Pickled jalapeños-garnish
- Limes quartered-garnish
- Chopped cilantro-garnish
- Sliced radish-garnish
- Sour cream or Greek plain yogurt-garnish
- Sliced avocado or guacamole
Instructions
- Prep all your garnishes to have ready to top your chilaquiles.
- Heat oil in a large skillet and cook onions for 6 minutes then add the garlic and cook for 1-2mintues. Add the enchilada sauce, 1 cup salsa, green chiles, and cooked chicken to the skillet.
- While the sauce is cooking fry an egg for each serving. Keep warm until ready to serve.
- Add your tortilla chips and cotija cheese to the skillet and toss carefully to coat. Once heated through serve with a fried egg on top. Add whatever garnishes you like and enjoy!
