Ingredients
  

  • 3 Tbsp Olive or coconut oil
  • 1 Head 2lbs Green cabbage-cored, quartered and cut into 2" pieces
  • 1 1/2 Tsp Salt-divided
  • 1 Onion-sliced thin
  • 1 Tbsp Ginger-grated
  • 3 Cloves Garlic-minced
  • 1 Serrano chile-seeded and sliced into rings
  • 1/2 Cup Cilantro-chopped
  • 1/4 Cup Mint-chopped
  • 1 1/2 Tbsp Fish sauce
  • 2 Tsp Lime juice

Instructions
 

  • Heat oil in a 12" nonstick skillet over medium high heat for a couple minutes. Add in onion and 1/2 teaspoon salt, cover and cook for 5 minutes. Stirring occasionally.
    Add cabbage along with 1 teaspoon of salt. Cover and cook until cabbage is tender, 4 minutes. Stirring occasionally.
  • Stir in chile and continue cooking uncovered for 4 minutes stir halfway through. If you get some char that adds extra flavor. Stir in ginger and garlic and cook for 1-2 minutes being careful that the garlic doesn't burn.
  • Remove from heat and stir in cilantro, mint, fish sauce and lime juice. Serve from skillet or transfer to a serving platter.
