Airfryer Gingerbread Bites
These airfryer gingerbread bites are so moist, flavorful and easy to make. A tasty treat to give and eat any time of the year.
The perfect couple of bites. So moist and the flavor is rich with molasses and a hint of a ginger. Great any time of day with a cup of coffee or hot tea. Add some ice cream or whipped and now you have a fun dessert.
This is the first time I used this egg bite mold, and it was so much fun making these air fryer gingerbread bites. I am so looking forward to making other recipes with this egg mold bite and I will pick up another one, so I don’t have to wait for the bites to cool to refill the mold.
Cream your butter with the molasses and brown sugar. This is the beginning of something beautiful.
Tip spray the measuring glass with cooking spray so the molasses doesn’t stick.
Don’t worry if you don’t have cake flour. Take 1 cup all-purpose flour and remove 2 tablespoons. Add 2 tablespoons of cornstarch and sift together, twice. Remeasure the flour before using.
I started using parchment paper to move my dry ingredients into my mixing bowl. This way I don’t spill any on my counter and the dry ingredients make it all into the mixing bowl.
The finished batter. Just add it to your mold or cupcake pans and be patient while air frying.
Not all air fryers cook the same. My suggestion is to do a test run to see how long yours need to cook.
I batch cooling and 1 batch resting. This recipe made 3 batches of these 4 bite wonders.
Airfryer Gingerbread Bites
Ingredients
- 1/2 cup butter
- 3/4 cup brown sugar
- 1/2 cup molasses
- 2/3 cup hot water
- 2 1/4 cup cake flour*
- 1 tsp baking powder
- 1/2 tsp baking soda
- pinch salt
- 1 tsp cinnamon
- 1/2 tsp ginger
- 2 eggs-beaten
Instructions
- Preheat airfryer to 320' on airfryer setting.
- Grease your egg bite mold with cooking spray. Set aside.
- In the bowl of the stand mixer cream butter. I left mine out overnight to speed up the process. Then gradually add in the brown sugar and molasses and continue beating, add the hot water and combine.
- In another bowl or on parchment paper sift the flour, baking powder, baking soda, salt, cinnamon and ginger. I like using parchment paper because all of your dry ingredients make it into the stand mixer bowl instead of some on the counter.
- Add the dry ingredients into your mixing bowl in 3 parts. Remember to scrape down the bowl after each addition.
- Add the beaten eggs and beat to combine. Scrape the bowl between added ingredients to incorporate completely.
- Pour the batter into your mold and fill it 2/3 full. Set the mold into the preheated airfryer and bake for about 14 minutes. I like to do a test run to make sure the time is correct. All ovens are different and if 14 minutes it too long or not long enough just adjust the time and make a note in your recipe.
- Stick a toothpick in the center of 1 bite to see if it comes out clean. Let cool enough to unmold then plate and serve.
- If making it for dessert or company I would add whipped cream or ice cream. A nice touch would be a glaze or just some powdered sugar.
- This would be a great gift. Add a tea bag and mug and make someone's day!
