Drinking vinegars have been around since the Babylonians. Drinking vinegars or shrubs are a way to preserve fruit prior to refrigeration. When I read about a drinking vinegar, I knew I need to give this a try. So, I made a blueberry shrub drinking vinegar.

I have figured out that I really love to try new things in the kitchen. Some are good and some not so tasty. This blueberry shrub is fantastic and can’t wait to whip up another batch. Next, I am trying a raspberry shrub so stay tuned.

Start with your favorite fruit.

Add sugar and let sit for about 1 day shaking or stirring a couple of times until sugar is mostly dissolved.

Your mixture will be very juicy and the sugar will be dissolved after one day . Strain the fruit through a fine sieve, but if you want the pulp in your shrub base then don’t strain. Sanitize your mason jar or whatever you plan to store the shrub in. Make sure to scrape any leftover sugar into your jar.

You can store this blueberry shrub drinking vinegar in the fridge for 6 months.

You can drink the berry shrub right away, but it tastes better if you leave it for at least one week. My favorite way to drink this shrub is with vodka and club soda over ice with a mint sprig for garnish. It’s my favorite summertime cocktail. So, refreshing.

To make the Blueberry Vodka Shrub use 2oz of your favorite vodka, 2 oz of the shrub mixture, top off with club soda and garnish with mint and fresh blueberries.

Blueberry Shrub Drinking Vinegar

Blueberry shrub drinking vinegar can be used as a mixer in a cocktail. Looking for something non- alcoholic just add soda water.

Ingredients
  

  • 6 oz fresh blueberries
  • 3/4 cup granulated sugar
  • 1/2 cup apple cider vinegar

Instructions
 

  • In a medium bowl mash blueberries with a fork. Add sugar and stir. Cover bowl and leave at room temperature, stirring a couple of times. Leave out for about 24 hours until sugar is mostly dissolved and berries are very soft and juicy.
  • Strain fruit through a fine mesh strainer into a mason jar.
  • Add vinegar and stir. Taste and add more sugar or vinegar if needed.
  • The flavors combine as it sets. Put into the fridge. It keeps for about 6 months.
