Ingredients
  

  • 2 Lbs Potatoes-cut into 1" cubes
  • 1/2 Tsp Salt-divided
  • Salt for potato water
  • 8 Tbsp Butter
  • 1/4 Cup Parsley-chopped
  • 2 Cloves Garlic-minced
  • 1/4 Tsp Black pepper

Instructions
 

  • Salt 2 quarts of water for the potatoes in a large pot. Bring potatoes to boil over high heat. Reduce heat to medium low and simmer until potatoes are tender, about 4-5 minutes. Drain potatoes and set aside.
  • Melt butter in a 12" nonstick skillet over medium heat. add potatoes in an even layer, sprinkle with 1/4 teaspoon salt. Don't disturb potatoes until they are golden brown, about 6-8 minutes.
  • Flip potatoes and sprinkle with remaining salt. Continue cooking potatoes turning every couple of minutes, about 6-8 minutes. Until potatoes are well browned on all sides. Turn off the heat.
  • Add parsley, garlic and pepper then gently toss to combine. Transfer to a platter and serve.
