Chicken Jalapeno Popper Soup
Ingredients
- 4 oz bacon-garnish
- 1 Tbsp olive oil
- 1 onion-chopped
- 1 yellow bell pepper-finely diced
- 4 jalapenos-seeded and finely diced
- 4 cloves garlic-minced
- 1/4 cup all-purpose flour
- 4 cups chicken broth
- 2 cups almond milk
- 4 oz cream cheese-room temperature and cut into pieces
- 2 cups rotisserie chicken
- 1 cup cheddar cheese-shredded for garnish
- pickled jalapenos-garnish
Instructions
- Over medium heat cook bacon in a Dutch oven until crisp. Transfer bacon to paper towel lined plate. Leave the bacon grease in the Dutch oven.
- Cook the onions, peppers and jalapenos in the bacon grease along with 1/2 tsp. salt over medium heat covered. Stirring occasionally until tender, about 6 minutes.
- Stir in garlic and cook for 2 minutes. Add flour and cook for 1 minute, stirring constantly. Whisk in broth, then milk. Bring to a boil, reduce heat to simmer until thickened, 10-12 minutes.
- Stir in cream cheese until melted and add in chicken, simmer until chicken is heated through.
- Serve with cheese, jalapenos and bacon.
