Ingredients
  

SALAD

  • 3 Cups Cooked chicken or rotisserie chicken
  • 1 Head Napa cabbage-6cups, chopped
  • 2 Cups Romaine lettuce-chopped
  • 1/2 Head Red cabbage-3 cups, shredded
  • 1 Cup Carrots, matchstick or shredded
  • 1 Cup Snow peas-julienned
  • 1 Cup Mandarin oranges
  • 1/3 Cup Cilantro-chopped
  • 1/3 Cup Scallions-chopped
  • 1/2 Cup Craisins
  • 2/3 Cup Sliced almonds
  • 2 Tbsp Sesame seeds
  • 1/2 Cup Edamame-shelled
  • 1 Cup Wonton strips

DRESSING

  • 1/3 Cup Rice vinegar
  • 1/4 Cup Soy sauce
  • 2 Tbsp Sweet chili sauce
  • 1 1/2 Tbsp Sesame oil

Instructions
 

  • Add all dressing ingredients to a jar and shake until well blended. Or use your favorite bottled Asian dressing. Remove 3 tablespoons to marinate the chicken. Store the rest of the dressing in the fridge until ready to use. Toss the chicken to coat.
  • Put all salad ingredients in a large bowl except wonton strips. Toss desired amount of dressing with salad to coat. Add wonton strips and serve.
